Make My New Favorite Breakfast Cereal

What do you have for breakfast? For the longest time I was a steel cut oatmeal guy. But I recently came across this recipe from Mark Bittman for a homemade cold cereal that I am in love with, so I thought I would share it with you. It is essentially a Meusli, which is super simple to make and oh so good for you.

Here is what Bittman has to say about this recipe:

So superior to store-bought you may never go back. Uncooked rolled oats - sweet, crunch, and chewy - provide the base, and the rest of the mixture is totally customizable. Serve with fruit and you’re set until lunchtime.

I mixed up a batch of this cereal and ate it every morning for a week. Super easy and satisfying.


Homemade Cold Cereal

Ingredients:

  • 3 1/2 cups rolled oats

  • 1/2 cup mixed chopped nuts and seeds

  • 1/2 cup raisins or other chopped dried fruit

  • 1/4 cup unsweetened grated coconut

  • 1/2 teaspoon cinnamon or cardamom, or to taste

  • Pinch of salt

Directions:

Combine the oats, nuts and seeds, dried fruit, coconut, and spices in a large bowl. Store in an airtight container in the fridge for up to 2 months.

To serve, put about 1 cup of the cereal in a bowl and top with milk (dairy or non-dairy). If you have time, let the bowl sit for 10 minutes or more to let the oats absorb some of the milk so they’ll soften and sweeten. Top with fresh fruit (banana, apple, blueberries, etc) and enjoy.
